Shawarma Recipe

Delightful shawarmaRoasted chicken is the primary selection for shawarma. It is the starting ingredient, in which the dish cannot be served without. For serving 3-4 people, 1 1/2 pounds of chicken should suffice. 2 pounds would be needed for a group of 5 or 6 people. You’ll want to buy chicken breasts, skinless and boneless. For the purpose of this recipe, let’s say we’re making shawarma for 4 people.

Marinade brings out the flavor in the meal. It’s a mix of various herbs and spices, used to create a zesty taste to the dish.

Choose your marinade spices

Common spices used in shawarma include cardamom, cumin, coriander, paprika, and allspice. Though, the chosen spices are up to you! That’s what is fun about making the marinade–you can pick and choose which spices to mix. Maybe you’ll try one mix of spices the first time and change it up the next time. It’s your choice!

There are a few constant ingredients needed in the marinade. You’ll want 1 cup yogurt, 1/4 cup vinegar, and 2 tablespoons lemon juice. All spices should range from a 1/2 teaspoon to 1 teaspoon. Of course, salt and pepper make for a nice addition to the marinade as well.

Apart from the marinade, you will need to make the sauce. Shawarma sauce consists of 1 cup Greek yogurt, 2 cloves garlic, 1/4 cup lemon juice, and 2 tablespoons yogurt.

Lastly, you’ll need 4 flatbreads, either Lebanese or pita bread. Add lettuce and tomato to complement the bread.

Making the marinade

  1. Mix 1 cup yogurt, 1/4 cup vinegar, garlic cloves, salt and pepper, and your choice of spices into a large bowl.
  2. Toss in the chicken. Make sure the marinade surrounds and adequately coats each piece of chicken.

It is best to make the marinade the night before. Once it is made, you can cover and refrigerate. You’re marinade will be ready to go for the next day’s meal.

Cooking the chicken and finishing touches

  1. Separately, combine the sauce ingredients–1 cup Greek yogurt, 2 cloves garlice, 1/4 cup lemon juice, and salt and pepper–into a bowl and mix.
  2. Cook the chicken. Place it in a crock-pot or large saucepan and cook on medium high heat for 40-45 minutes, or however long you can ensure it is cooked properly.
  3. You’re almost done. Slice the chicken and evenly distribute the chicken slices onto the pita bread.
  4. Pour on the sauce, add any preferred vegetables, wrap it, and you have yourself a well-made shawarma!
